Ingredients
Scale
1 cup cottage cheese
6 large eggs
1/2 cup shredded cheese (Monterey Jack or cheddar)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup chopped cooked ham or bacon (optional mix-in)
1 tablespoon chopped chives (optional mix-in)
Instructions
Preheat your oven to 325°F (160°C). Lightly grease a 12-cup muffin tin or silicone egg bite mold.
In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth, about 30 seconds. This step is key for a smooth texture similar to Starbucks egg bites.
Stir in your desired mix-ins, such as ham, bacon, or chives, into the blended egg mixture.
Divide the mixture evenly among the prepared muffin cups, filling each about three-quarters full.
Sprinkle the shredded cheese over the top of each cup.
Bake for 20 to 25 minutes, or until the egg cups are set and a toothpick inserted into the center comes out clean.
Let the egg cups cool in the tin for 5 minutes before carefully removing them.
For meal prep, cool completely before storing in an airtight container in the refrigerator for up to 4 days.
Notes
For a smoother texture, you can use an immersion blender directly in a large measuring cup instead of a full blender.
If you prefer a sous-vide style texture, place the muffin tin inside a larger baking dish and add hot water to the dish until it reaches halfway up the sides of the muffin tin (a water bath). Bake as directed.
These protein egg cups reheat well in the microwave for 30 to 45 seconds.
