- 2 cups grated zucchini (about 2 medium zucchini)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/4 cup chopped walnuts or pecans (optional)
- In a large bowl, combine the grated zucchini, melted butter, and eggs. Mix well.
- In a separate bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Fold in the chopped nuts, if using.
- Grease your crockpot insert well with butter or cooking spray.
- Pour the batter into the prepared crockpot.
- Cover and cook on low for 2 to 3 hours, or on high for 1 to 1.5 hours, until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the crockpot for 10 minutes before carefully removing it.
- Let it cool completely on a wire rack before slicing and serving.
Notes
- Ensure your zucchini is well-drained to prevent a soggy bread.
- Adjust spices to your preference.
- For a sweeter bread, you can add a glaze made from powdered sugar and a little milk.
