Ingredients
Scale
1 medium butternut squash
1 cup cooked quinoa
1/2 cup fresh cranberries
1/2 cup chopped walnuts
1/4 cup finely chopped red onion
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon cinnamon
Salt to taste
Black pepper to taste
2 tablespoons olive oil
Instructions
Preheat your oven to 400°F (200°C).
Cut the butternut squash in half lengthwise and scoop out the seeds.
Place the squash halves cut-side down on a baking sheet.
Roast for 30-40 minutes, or until the squash is tender when pierced with a fork.
While the squash is roasting, prepare the filling. In a bowl, combine the cooked quinoa, cranberries, walnuts, red onion, garlic, thyme, rosemary, and cinnamon.
Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Mix well.
Once the squash is tender, carefully flip the halves over.
Spoon the quinoa mixture evenly into the hollowed-out squash halves.
Drizzle the tops with the remaining 1 tablespoon of olive oil.
Return the stuffed squash to the oven and bake for another 15-20 minutes, or until the filling is heated through and the cranberries are softened.
Serve hot.
Notes
You can substitute rice for quinoa if preferred.
Feel free to add other spices like nutmeg or sage to the filling.
For a sweeter dish, add a drizzle of maple syrup to the filling.
