Ingredients
Scale
1 pound pasta (spaghetti, linguine, or fettuccine)
2 ripe avocados
4 cloves garlic
1/4 cup fresh lemon juice
1/4 cup olive oil
1/4 cup pasta water (reserved)
1/2 cup fresh basil leaves
Salt to taste
Black pepper to taste
Instructions
Cook pasta according to package directions. Before draining, reserve about 1/2 cup of the starchy cooking water.
While the pasta cooks, prepare the sauce. Combine the avocados, garlic, lemon juice, olive oil, and basil in a food processor or high-speed blender.
Blend until completely smooth and creamy. Add a few tablespoons of the reserved pasta water until the sauce reaches your desired consistency.
Season the sauce generously with salt and pepper. Taste and adjust seasoning as needed.
Drain the pasta and return it to the pot or a large bowl.
Pour the creamy avocado sauce over the hot pasta. Toss everything quickly to coat evenly. If the sauce seems too thick, add more reserved pasta water, one tablespoon at a time.
Serve immediately with an extra grind of black pepper.
Notes
Use very ripe avocados for the creamiest texture.
Do not overheat the sauce; the heat from the pasta is enough to warm it through.
This sauce is best eaten immediately after making.
