Enjoy this warm and comforting Creamy Coconut Lime Chicken Soup. It brings bright, tangy Thai flavors to your table for a satisfying meal.

Ingredients

  • Chicken breasts, cooked and shredded (about 2 cups)
  • Chicken broth (6 cups)
  • Full-fat coconut milk (1 can, 13.5 oz)
  • Lemongrass stalks, bruised (2)
  • Ginger, fresh, sliced (1 inch piece)
  • Garlic cloves, smashed (3)
  • Lime juice, fresh (1/4 cup, plus more for serving)
  • Fish sauce (2 tablespoons)
  • Brown sugar (1 teaspoon)
  • Red pepper flakes (1/2 teaspoon, adjust to taste)
  • Cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Combine chicken broth, lemongrass, ginger, and garlic in a large pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. Strain the broth to remove the solids (lemongrass, ginger, garlic). Return the clear broth to the pot.
  3. Stir in the coconut milk, shredded chicken, fish sauce, brown sugar, and red pepper flakes.
  4. Heat gently until the soup is hot. Do not boil after adding coconut milk.
  5. Remove the pot from the heat. Stir in the fresh lime juice. Taste and adjust seasoning; add more lime juice or fish sauce if needed.
  6. Ladle the soup into bowls. Garnish generously with fresh cilantro and serve immediately with lime wedges.

Notes

  • You can use rotisserie chicken for quick preparation.
  • For an extra layer of flavor, add lime zest along with the juice.
  • If you prefer a spicier soup, increase the amount of red pepper flakes.
