Make this delicious Creamy Tuscan Salmon all in one skillet. You get perfectly cooked salmon nestled in a rich, creamy sauce with fresh spinach and sweet sun-dried tomatoes. It is a simple, satisfying meal ready fast.

Ingredients

  • Salmon fillets (about 6 oz each)
  • Olive oil
  • Garlic cloves, minced
  • Sun-dried tomatoes, chopped
  • Chicken broth
  • Heavy cream
  • Fresh spinach
  • Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Season the salmon fillets with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the salmon for 3-4 minutes per side until golden brown. Remove salmon and set aside.
  4. Reduce heat to medium. Add minced garlic to the skillet and cook until fragrant, about 30 seconds.
  5. Stir in the chopped sun-dried tomatoes.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  7. Reduce heat to low. Stir in the heavy cream and grated Parmesan cheese until the sauce thickens slightly.
  8. Add the fresh spinach to the sauce, stirring until it wilts down.
  9. Return the salmon fillets to the skillet, nestling them into the sauce.
  10. Cook for another 2-3 minutes, spooning sauce over the salmon until it is cooked through. Serve immediately.

Notes

  • Use skin-on salmon for extra flavor, searing skin-side down first.
  • If you prefer a tangier sauce, add a splash of white wine before the chicken broth.
  • You can substitute vegetable broth for chicken broth if needed.
