Ingredients
Scale
2 lbs chicken wings (flats and drumettes)
1 tablespoon baking powder (not baking soda)
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
Instructions
Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
In a large bowl, combine the baking powder, salt, garlic powder, onion powder, black pepper, and cayenne pepper.
Add the dried chicken wings to the bowl. Toss thoroughly until every piece is evenly coated with the dry mixture.
Preheat your air fryer to 380°F (195°C) for 5 minutes.
Arrange the wings in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Air fry for 18 minutes at 380°F (195°C).
After 18 minutes, increase the temperature to 400°F (200°C). Cook for an additional 4 to 6 minutes, checking frequently until the wings are deep golden brown and very crispy.
Remove from the air fryer and serve immediately with your preferred sauce or enjoy the dry rub flavor.
Notes
Using aluminum-free baking powder yields the best results for color and texture.
Ensure the wings are completely dry before seasoning; moisture prevents crisping.
If you want to toss the wings in sauce (like Buffalo or BBQ), do so immediately after they come out of the air fryer and serve right away to maintain maximum crunch.
