This Crunchy Apple Brussels Sprout Slaw offers a refreshing, sweet-tart side dish. It perfectly balances the crispness of shaved Brussels sprouts with sweet apple, making it a great addition to any meal. Jen and Alex created this recipe sharing flavors from their global journey.

Ingredients

Scale
  • 1 pound Brussels sprouts, thinly shaved
  • 1 large crisp apple (like Honeycrisp or Fuji), cored and thinly sliced or diced
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1/4 cup chopped pecans or walnuts (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Brussels sprouts by trimming the ends and removing any loose outer leaves. Shave them very thinly using a mandoline or a sharp knife. Place the shaved sprouts in a large bowl.
  2. Add the sliced or diced apple to the bowl with the Brussels sprouts.
  3. In a small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and honey or maple syrup until smooth. This is your dressing.
  4. Pour the dressing over the Brussels sprouts and apple mixture.
  5. Toss everything gently until the vegetables and fruit are evenly coated.
  6. Stir in the chopped nuts, if using.
  7. Season the slaw generously with salt and pepper.
  8. Taste and adjust seasoning if needed. You might want more vinegar for tartness or honey for sweetness.
  9. For the best flavor, cover the slaw and chill it in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld.

Notes

  • For a quicker prep, you can buy pre-shaved Brussels sprouts.
  • If you prefer a lighter dressing, substitute half of the mayonnaise with plain Greek yogurt.
  • This slaw tastes even better the next day as the sprouts soften slightly.
  • Use fresh, firm apples for maximum crunch.
