Ingredients
Scale
1 large cucumber
1/2 cup hummus (your favorite flavor)
2 tablespoons fresh dill, chopped
1 tablespoon fresh chives, chopped
1 teaspoon lemon juice
Pinch of black pepper
Instructions
Wash and dry the cucumber thoroughly.
Using a mandoline or a sharp vegetable peeler, slice the cucumber lengthwise into very thin ribbons. Aim for slices about 1/8 inch thick.
In a small bowl, mix the hummus, chopped dill, chopped chives, and lemon juice. Stir until combined.
Lay a cucumber ribbon flat on a clean surface.
Spread a thin layer of the seasoned hummus mixture across the entire surface of the ribbon.
Starting from one end, tightly roll up the cucumber ribbon.
Secure the roll-up with a toothpick if necessary.
Repeat with the remaining ribbons and filling.
Serve immediately for the best texture.
Notes
Choose a firm cucumber for easier slicing.
You can substitute any herbs you like, such as parsley or mint.
For extra flavor, sprinkle the finished rolls with paprika or a drizzle of olive oil.
If the cucumber slices tear, use the thicker ends for smaller, bite-sized pinwheels instead.
