Bake this intensely rich and decadent flourless chocolate cake. It is naturally gluten-free and perfect for a special winter dessert gathering. You will create a deep, luxurious chocolate experience.

Ingredients

  • Unsalted butter: 8 ounces
  • Bittersweet chocolate (at least 70% cacao), chopped: 8 ounces
  • Granulated sugar: 3/4 cup
  • Large eggs, separated: 4
  • Vanilla extract: 1 teaspoon
  • Cocoa powder, unsweetened: 1/4 cup
  • Salt: 1/4 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch springform pan and line the bottom with parchment paper.
  2. Melt the butter and chopped chocolate together in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat.
  3. Stir the sugar into the melted chocolate mixture until combined.
  4. Whisk in the egg yolks one at a time until fully incorporated. Add the vanilla extract.
  5. In a separate clean bowl, beat the egg whites with the salt until stiff peaks form.
  6. Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it.
  7. Fold in the remaining egg whites until just combined. Do not overmix.
  8. Sift the cocoa powder over the batter and gently fold it in.
  9. Pour the batter into the prepared pan.
  10. Bake for 30 to 35 minutes. The edges will look set, but the center will still be soft.
  11. Let the cake cool completely in the pan on a wire rack before unmolding. The cake will sink as it cools.
  12. Serve dusted with extra cocoa powder or powdered sugar.
