Ingredients
Scale
1 pound ground chicken or cooked shredded chicken
1 (10.5 ounce) can cream of chicken soup
1 (10.5 ounce) can cream of mushroom soup
1 cup sour cream
1 cup milk
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded cheddar cheese, divided
1 (4 ounce) can diced green chiles, drained
1 bag (9.25 ounces) Nacho Cheese Flavored Tortilla Chips (Doritos)
1 cup shredded Monterey Jack cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the cooked chicken, cream of chicken soup, cream of mushroom soup, sour cream, milk, onion powder, garlic powder, salt, and pepper. Mix well until everything is incorporated.
Stir in 1 cup of the cheddar cheese and the drained green chiles into the chicken mixture.
Crush the Doritos. You can do this in a large zip-top bag using a rolling pin or your hands. You need about 6 cups of crushed chips.
Spread half of the crushed Doritos evenly across the bottom of the prepared baking dish.
Pour the chicken mixture over the chip layer and spread it out evenly.
Sprinkle the remaining 1 cup of cheddar cheese and the Monterey Jack cheese over the top of the chicken mixture.
Top the cheese layer with the remaining crushed Doritos for the crunchy topping.
Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is lightly golden brown.
Let the casserole rest for 5 minutes before you cut and serve it.
Notes
For a spicier version, use Spicy Nacho Cheese Doritos or add a dash of hot sauce to the filling mixture.
If you prefer ground beef, substitute 1 pound of cooked, drained ground beef for the chicken.
To keep the topping crispier, reserve about 1/4 of the crushed chips and sprinkle them on during the last 5 minutes of baking.
