Ingredients
Scale
1 cup dark chocolate chips
1/2 cup heavy cream
2 tablespoons unsalted butter
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup finely ground pistachios (for filling)
1/4 cup pistachio paste or finely chopped pistachios (for coating)
1/2 cup melted milk chocolate (for dipping)
1/4 cup kataifi pastry, lightly toasted (optional coating)
Instructions
Prepare the ganache base: Place the dark chocolate chips in a heatproof bowl.
Heat the heavy cream and butter in a small saucepan until just simmering. Do not boil.
Pour the hot cream mixture over the chocolate chips. Let it sit undisturbed for 5 minutes.
Whisk the mixture gently until smooth and fully combined into a ganache.
Whisk in the powdered sugar and vanilla extract until smooth.
Chill the ganache in the refrigerator for at least 2 hours, or until firm enough to scoop.
Prepare the filling: Mix the ground pistachios with a small amount of the chilled ganache to form a thick, pliable paste. Roll this paste into small balls, about 1/2 inch in diameter.
Take a spoonful of the main chilled ganache and flatten it in your palm. Place one small pistachio ball in the center.
Carefully wrap the ganache around the pistachio center and roll it between your palms to form a smooth ball, about 1 inch in diameter.
If using a crunchy coating, roll the finished balls in the chopped pistachios or toasted kataifi pastry.
Melt the milk chocolate for dipping in a double boiler or microwave.
Dip each chocolate ball halfway into the melted milk chocolate and place on parchment paper to set.
Refrigerate the Dubai Chocolate Balls for 30 minutes before serving.
Notes
For a richer flavor, use high-quality dark chocolate (70% cacao or higher).
If you prefer a softer center, reduce the chilling time for the main ganache slightly.
To toast kataifi, toss it lightly with a teaspoon of melted butter and bake at 350°F (175°C) for 5-7 minutes until golden brown.
