- 2 large eggs
- 1 tablespoon milk or water
- 1 tablespoon diced fresh tomato
- 1 tablespoon small mozzarella balls (pearls), halved
- 1 teaspoon chopped fresh basil
- Pinch of salt
- Pinch of black pepper
- Lightly grease two standard microwave-safe ramekins or large mug bottoms.
- In a small bowl, whisk the eggs, milk (or water), salt, and pepper until combined.
- Divide the diced tomato, halved mozzarella balls, and chopped basil evenly between the two prepared ramekins.
- Pour the egg mixture over the fillings in each ramekin, distributing it equally.
- Microwave on high for 60 to 90 seconds, or until the eggs are set. Cooking time varies by microwave power. Check at 60 seconds.
- Let the cups cool for one minute before carefully removing them from the ramekins. Serve immediately.
Notes
- Use small ramekins or silicone muffin molds designed for microwave use for best results.
- If your eggs are not fully set after 90 seconds, microwave in 10-second increments until done.
- For easier removal, line the ramekins with a small piece of parchment paper before greasing.
