Make this simple, no-cook peanut sauce in five minutes to top any noodle dish quickly.

Ingredients

Scale
  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Combine the peanut butter and warm water in a small bowl. Whisk until mostly smooth.
  2. Add the soy sauce, rice vinegar, maple syrup, ginger, and minced garlic to the bowl.
  3. Whisk vigorously until the sauce is completely smooth and creamy. If the sauce is too thick, add water, one teaspoon at a time, until you reach your desired consistency for coating noodles.
  4. Taste the sauce and adjust seasonings if needed (add more vinegar for tang or sweetener for balance).
  5. Pour immediately over cooked and drained noodles.

Notes

  • If you prefer a spicier sauce, add 1/2 teaspoon of sriracha or chili garlic sauce.
  • This sauce works well with cold noodles, hot ramen, or rice vermicelli.
  • For a richer flavor, substitute 1 tablespoon of the water with sesame oil.
