Make a quick and flavorful Tex-Mex dinner with this Easy Chicken Fajita Skillet recipe. You get tender chicken, crisp peppers, and onions cooked together in one pan for a simple weeknight meal.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 packet (about 1 ounce) fajita seasoning mix
  • 1/4 cup water
  • Optional: Warm tortillas, sour cream, salsa, cheese for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add the sliced onions and bell peppers to the same skillet. Cook until softened and slightly charred, about 5 minutes.
  4. Return the cooked chicken to the skillet with the vegetables.
  5. Sprinkle the fajita seasoning mix over the chicken and vegetables. Stir well to coat everything.
  6. Pour in the water. Cook for 1-2 minutes, stirring constantly, until the sauce thickens slightly.
  7. Serve immediately with your favorite fajita toppings and warm tortillas.

Notes

  • For extra heat, add 1/2 teaspoon of chili powder or a pinch of cayenne pepper with the fajita seasoning.
  • You can use chicken thighs instead of breasts for juicier results.
  • Squeeze fresh lime juice over the finished fajitas before serving for brightness.
