Make a quick, high-protein Alfredo sauce using cottage cheese instead of heavy cream. This recipe blends quickly for a smooth texture.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/2 cup milk (any type)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter or olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Place the cottage cheese, milk, Parmesan cheese, minced garlic, salt, pepper, and nutmeg (if using) into a blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  3. Heat the butter or olive oil in a small saucepan over medium heat.
  4. Pour the blended sauce into the saucepan.
  5. Heat the sauce gently for 3 to 5 minutes, stirring constantly, until it is warmed through. Do not boil.
  6. Serve immediately over your favorite cooked pasta or vegetables.

Notes

  • For the smoothest sauce, use a high-speed blender. If using a standard blender, let the cottage cheese sit at room temperature for 10 minutes before blending.
  • If the sauce is too thick after heating, add milk, one tablespoon at a time, until you reach your desired consistency.
  • This sauce pairs well with chicken, broccoli, or zucchini noodles.
