Make fresh, flavorful green beans that roast to a perfect crispness. This simple recipe uses garlic and Parmesan cheese for an irresistible side dish perfect for weeknight meals or Thanksgiving.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easy cleanup.
  2. Place the trimmed green beans in a large bowl. Drizzle with olive oil and toss to coat them evenly.
  3. Add the minced garlic, salt, and pepper to the bowl. Toss again until the beans are well seasoned.
  4. Spread the green beans in a single layer on the prepared baking sheet. Avoid overcrowding the pan for best roasting results.
  5. Roast for 12 to 15 minutes, shaking the pan halfway through, until the beans are tender-crisp.
  6. Remove the baking sheet from the oven. Immediately sprinkle the grated Parmesan cheese over the hot green beans. Toss gently to melt the cheese slightly.
  7. Serve your crispy garlic Parmesan green beans right away as a flavorful vegetable side dish.

Notes

  • For extra flavor, you can add 2 slices of crumbled cooked bacon when tossing with the Parmesan cheese.
  • If you prefer a softer bean, increase the roasting time by 3 to 5 minutes.
  • This recipe works well for meal prep; reheat gently in the oven to maintain crispness.
