Make simple, high-protein snack bars at home without using an oven. These bars use common ingredients and set quickly.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup vanilla or unflavored whey protein powder
  • 1/2 cup natural peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the rolled oats, protein powder, chia seeds, and salt in a medium bowl. Mix these dry ingredients well.
  2. In a separate, microwave-safe bowl, combine the peanut butter and honey (or maple syrup). Microwave for 20 to 30 seconds until the mixture is soft and easily stirrable.
  3. Pour the melted peanut butter mixture and the vanilla extract into the dry ingredients. Stir everything together until a thick, uniform dough forms.
  4. Fold in the mini chocolate chips.
  5. Press the dough evenly into an 8×8 inch pan lined with parchment paper, leaving an overhang for easy removal. Press down firmly with the back of a spoon or spatula.
  6. Refrigerate the pan for at least 2 hours, or until the bars are firm enough to cut.
  7. Lift the block out using the parchment paper overhang and cut it into 12 equal bars.

Notes

  • For a firmer bar, reduce the liquid sweetener slightly.
  • Store the finished bars in an airtight container in the refrigerator for up to one week.
  • You can substitute peanut butter with almond butter or sunflower seed butter for variation.
