Make soft, chewy pretzel wrapped hot dogs at home using a simple baking soda bath for authentic flavor.

Ingredients

Scale
  • 1 package (14 ounces) hot dogs or cocktail wieners
  • 1 1/2 cups warm water (about 110°F)
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 3 3/4 cups all-purpose flour, plus more for dusting
  • 1/4 cup unsalted butter, melted
  • 1/2 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse salt, for topping

Instructions

  1. Combine warm water, brown sugar, and yeast in a large bowl. Let stand for 5 minutes until foamy.
  2. Stir in 1 cup of flour and the melted butter. Mix until combined.
  3. Gradually add the remaining flour and 1 teaspoon of salt. Mix until a shaggy dough forms, then knead on a lightly floured surface for 5-7 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  5. While dough rises, prepare the baking soda bath: Dissolve 1/2 cup baking soda in 8 cups of water in a wide, shallow pan.
  6. Punch down the dough. Divide it into 8 equal pieces. Roll each piece into a 10-inch rope.
  7. Wrap one dough rope around each hot dog, pressing the ends together to seal.
  8. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  9. Working one at a time, briefly dip each pretzel dog into the baking soda bath for about 20-30 seconds, turning to coat both sides. Lift with a slotted spatula and place on the prepared baking sheet.
  10. Brush the tops of the pretzel dogs with the beaten egg wash and sprinkle generously with coarse salt.
  11. Bake for 12-15 minutes, or until deep golden brown. Serve warm with your preferred dipping sauce.

Notes

  • For mini pretzel dogs, use cocktail wieners and cut the dough ropes into shorter lengths.
  • You can substitute the egg wash with a mixture of 1 tablespoon water and 1 teaspoon milk for a slightly less shiny finish.
  • Serve these with mustard or cheese sauce for dipping.
