- 2 cups chopped cucumber (peeled or unpeeled)
- 1/2 cup fresh lime juice (about 4-5 limes)
- 1/4 cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice cubes
- Optional: 1/4 cup fresh mint leaves
- Place the chopped cucumber, lime juice, sugar, and water into a blender.
- Add the optional mint leaves if you are using them.
- Blend the mixture until it is completely smooth.
- Taste the mixture and add more sugar if you prefer it sweeter, or more water if you want it less concentrated.
- Pour the mixture through a fine-mesh sieve into a pitcher to remove any pulp or cucumber solids. Press down on the solids to extract all liquid.
- Chill the Agua Fresca in the refrigerator for at least 30 minutes for best flavor.
- Serve the drink over plenty of ice.
Notes
- For a lower sugar option, replace the granulated sugar with 2 tablespoons of agave nectar or stevia equivalent.
- If you do not have a blender, finely grate the cucumber and let it steep in the water and lime juice mixture for one hour before straining.
- Garnish each glass with thin cucumber ribbons or lime wheels.
