Make these simple pizza muffins for a kid-friendly snack, party food, or easy freezer lunchbox addition. They are packed with cheesy pizza flavor.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup pizza sauce or marinara sauce
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup mini pepperoni, chopped (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, dried oregano, garlic powder, and black pepper.
  3. In a separate medium bowl, whisk the egg, milk, and vegetable oil until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  5. Stir in the pizza sauce, 3/4 cup of the mozzarella cheese, and the chopped pepperoni, if using. Mix briefly to distribute evenly.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Sprinkle the remaining 1/4 cup of mozzarella cheese over the tops of the muffins.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These mini pizza muffins freeze well. Cool them completely, then place them in a freezer-safe bag for up to three months. Thaw overnight or reheat from frozen in the microwave or oven.
  • For a different flavor, substitute the pepperoni with cooked, crumbled sausage or finely chopped cooked ham.
  • If you are making these for a lunchbox, they are best served at room temperature or slightly warmed.
