Make a sweet, cinnamon-swirled pancake bake right on a sheet pan for simple preparation and easy cleanup.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 1/4 cup melted butter, plus extra for greasing
  • 1 teaspoon vanilla extract
  • For the Swirl: 1/2 cup packed brown sugar
  • For the Swirl: 2 tablespoons ground cinnamon
  • For the Swirl: 4 tablespoons softened butter
  • For the Glaze: 1 cup powdered sugar
  • For the Glaze: 2 tablespoons milk
  • For the Glaze: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 13×9 inch baking sheet with butter.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, egg, 1/4 cup melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
  5. Prepare the swirl filling: In a small bowl, mix the brown sugar and cinnamon. Cut the 4 tablespoons of softened butter into the sugar mixture until crumbly.
  6. Pour half of the pancake batter into the prepared baking sheet and spread evenly.
  7. Sprinkle half of the cinnamon-sugar mixture over the batter layer.
  8. Pour the remaining batter over the top. Sprinkle the remaining cinnamon-sugar mixture over the top layer.
  9. Use a knife or skewer to gently swirl the cinnamon mixture into the batter layers. Do not mix completely.
  10. Bake for 20 to 25 minutes, or until the center is set and a toothpick comes out clean.
  11. While the bake cools slightly, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons milk, and vanilla extract until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
  12. Drizzle the glaze over the warm pancake bake before slicing and serving.

Notes

  • You can prepare the dry ingredients and the wet ingredients separately the night before. Mix them just before baking for a quick morning meal.
  • For a slightly gooier texture, reduce the baking time by 2-3 minutes.
  • If you prefer a thicker glaze, use less milk.
