Prepare this fresh, simple salad featuring strawberries and avocado with a bright, homemade citrus dressing. It requires no cooking and comes together quickly.

Ingredients

Scale
  • 4 cups mixed greens (like spring mix or spinach)
  • 1 pint fresh strawberries, hulled and sliced
  • 1 large ripe avocado, diced
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons poppy seeds (optional)
  • For the Vinaigrette:
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vinaigrette: In a small bowl or jar, whisk together the orange juice, lemon juice, olive oil, honey or maple syrup, salt, and pepper until well combined. Set aside.
  2. In a large bowl, combine the mixed greens, sliced strawberries, diced avocado, and sliced red onion, if using.
  3. Just before serving, drizzle about half of the citrus vinaigrette over the salad ingredients.
  4. Gently toss the salad until the greens and fruit are lightly coated. Add more dressing as needed to reach your preferred level of coating.
  5. Sprinkle with poppy seeds, if desired, and serve immediately.

Notes

  • For added protein, add 4 ounces of grilled chicken breast or 1/2 cup of crumbled feta cheese.
  • You can prepare the vinaigrette up to two days ahead and store it in the refrigerator. Shake well before using.
  • Use firm, ripe avocados for the best texture in the salad.
