Ingredients

Scale
  • 3 cups cooked short-grain sushi rice
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 ounces imitation crab meat, shredded
  • 8 ounces cooked salmon, flaked
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon soy sauce
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • For Topping:
  • 1/2 cup mayonnaise
  • 3 tablespoons sriracha
  • 1 tablespoon sesame oil
  • 2 tablespoons furikake seasoning
  • Optional: Nori sheets for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice. Press the seasoned rice evenly into the bottom of the prepared baking dish.
  3. In a medium bowl, combine the cream cheese, mayonnaise, 2 tablespoons of sriracha, and soy sauce until smooth.
  4. Fold the shredded imitation crab and flaked salmon into the cream cheese mixture. Spread this seafood mixture evenly over the rice layer.
  5. In a small bowl, mix the panko breadcrumbs and melted butter. Sprinkle this mixture over the seafood layer.
  6. Bake for 15 minutes, or until the topping is lightly golden brown.
  7. While baking, prepare the spicy topping: Whisk together the remaining 1/2 cup mayonnaise, 3 tablespoons sriracha, and sesame oil.
  8. Remove the dish from the oven. Spread the spicy mayo mixture evenly over the baked layer. Sprinkle generously with furikake seasoning.
  9. Return to the oven and bake for another 5 to 7 minutes, until the topping is heated through.
  10. Let the sushi bake cool for 5 minutes before serving. Scoop portions onto plates and serve with nori sheets for wrapping, if desired.

Notes

  • Use imitation crab or cooked salmon, or a mix of both, based on your preference.
  • For a richer flavor, toast the panko breadcrumbs slightly before mixing with butter.
  • Adjust the amount of sriracha in both the filling and the topping to control the heat level.
