Ingredients
Scale
1 1/2 cups all-purpose flour
1 cup cornmeal
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups unsweetened plant milk (like soy or almond)
1/4 cup neutral oil (like canola or vegetable)
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
Instructions
Preheat your waffle iron according to the manufacturer’s directions.
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
In a separate smaller bowl, combine the plant milk, oil, apple cider vinegar, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
Brush your hot waffle iron lightly with oil, if necessary.
Pour the batter onto the center of the iron, using the amount recommended for your specific appliance to avoid overflow.
Cook until the waffle is golden brown and crispy, usually 4 to 6 minutes.
Carefully remove the waffle and serve immediately with your favorite toppings.
Notes
For extra crispiness, let the batter rest for 5 minutes before cooking.
Apple cider vinegar helps activate the baking powder, giving you a good rise without eggs.
Soy milk generally yields the best results for vegan baking due to its protein content.
