A warm and comforting crockpot cheesy zucchini bread with a savory twist, perfect for fall.

Ingredients

Scale
  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped cooked bacon or ham (optional, for savory touch)

Instructions

  1. Grate the zucchini and squeeze out excess moisture.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together eggs, vegetable oil, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the shredded cheese and optional bacon or ham.
  6. Pour the batter into a greased and floured 9×5 inch loaf pan.
  7. Cook in a preheated oven at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a creamier texture, you can use sour cream or Greek yogurt instead of milk.
  • Add a pinch of cayenne pepper for a little heat.
  • This bread freezes well for future enjoyment.
