Ingredients
Scale
1 cup low-fat cottage cheese
1 cup fresh spinach, finely chopped
6 large eggs
1/4 cup shredded Monterey Jack cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
Cooking spray
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin with cooking spray.
In a blender, combine the cottage cheese and eggs. Blend until the mixture is completely smooth and creamy. This step is key for fluffiness.
Pour the blended mixture into a medium bowl. Stir in the chopped spinach, Monterey Jack cheese, salt, and pepper until just combined. Do not overmix.
Divide the batter evenly among the 12 prepared muffin cups, filling each about three-quarters full.
Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
For meal prep, cool completely before storing in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 2 months. Reheat in the microwave for 30-60 seconds.
Notes
For a bacon version, substitute the spinach with 1/2 cup of cooked, crumbled bacon.
If you do not have a blender, you can use an immersion blender or vigorously whisk the cottage cheese and eggs until smooth.
Freezing works well; place parchment paper between layers if stacking them in a freezer bag.
