Ingredients
Scale
12 slices thick bread (brioche or challah recommended)
4 large eggs
1 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (for batter)
1/4 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)
2 tablespoons melted butter (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a standard 12-cup muffin tin well.
Cut the bread slices into 1-inch cubes. Place the bread cubes evenly into the prepared muffin cups, filling each about two-thirds full.
In a medium bowl, whisk together the eggs, milk, vanilla extract, and 1/2 teaspoon of cinnamon until combined.
Pour the egg mixture evenly over the bread cubes in the muffin tin, allowing the bread to soak up the custard for about 5 minutes. Press the bread down gently if needed to submerge it.
In a small bowl, mix the granulated sugar and 1 tablespoon of cinnamon for the topping.
Brush the tops of the soaked bread cubes lightly with melted butter. Sprinkle the cinnamon sugar mixture generously over the tops of the muffins.
Bake for 18 to 22 minutes, or until the tops are golden brown and the centers are set.
Let the muffins cool in the tin for 5 minutes before carefully removing them. Serve warm.
Notes
For a make-ahead option, assemble the soaked muffins in the tin, cover, and refrigerate overnight. Add 5 minutes to the baking time if baking directly from the refrigerator.
Use stale or slightly dry bread for the best texture; it absorbs the custard better without becoming soggy.
If you prefer a softer center, slightly reduce the baking time.
