Make a delicious garlic butter herb prime rib for a perfect Christmas dinner. This recipe is easy to follow and will impress your guests.

Ingredients

Scale
  • 1 (3-4 pound) prime rib roast
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, combine the softened butter, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. Mix well.
  3. Pat the prime rib roast dry with paper towels.
  4. Spread the garlic herb butter evenly over the top and sides of the roast.
  5. Place the roast, fat side up, on a rack in a roasting pan.
  6. Roast for 15 minutes at 450°F (230°C).
  7. Reduce the oven temperature to 325°F (160°C) and continue roasting for approximately 10-12 minutes per pound, or until a meat thermometer inserted into the thickest part of the roast registers 120-125°F (49-52°C) for rare, or 130-135°F (54-57°C) for medium-rare.
  8. Remove the roast from the oven and let it rest, tented loosely with foil, for 15-20 minutes before carving.

Notes

  • For a crispier crust, you can broil the roast for the last few minutes of cooking, watching it closely to prevent burning.
  • If you prefer your prime rib more well-done, roast it for an additional 5-8 minutes per pound after it reaches your desired temperature.
  • Serve with your favorite au jus or horseradish sauce.
