Ingredients
Scale
1.5 lbs salmon fillet
1 lb mixed vegetables (broccoli, bell peppers, asparagus, zucchini)
3 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons butter, melted
1 teaspoon dried Italian seasoning
Salt and black pepper to taste
Lemon wedges for serving (optional)
Instructions
Preheat your oven to 400°F (200°C).
Chop your vegetables into bite-sized pieces.
In a large bowl, toss the vegetables with 2 tablespoons of olive oil, salt, and pepper.
Spread the seasoned vegetables in a single layer on a large baking sheet.
Roast the vegetables for 10-12 minutes while you prepare the salmon.
Pat the salmon fillet dry with paper towels.
In a small bowl, mix the melted butter with the remaining 1 tablespoon of olive oil, minced garlic, Italian seasoning, salt, and pepper.
Brush the garlic butter mixture evenly over the salmon fillet.
Remove the baking sheet from the oven. Gently place the seasoned salmon fillet on top of the vegetables.
Return the baking sheet to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve hot with lemon wedges if desired.
Notes
Feel free to use any seasonal vegetables you have on hand.
Adjust the amount of garlic to your preference.
For crispier vegetables, ensure they are in a single layer and not overcrowded on the baking sheet.
