Ingredients

Scale
  • 1 pound sirloin or tenderloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 1 cup quick-cooking polenta (corn grits)
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped

Instructions

  1. Season the steak bites generously with salt and pepper.
  2. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  3. Sear the steak bites in batches until browned on all sides, about 2-3 minutes per batch. Remove the steak and set aside.
  4. Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the skillet.
  5. Add the minced garlic, thyme, and rosemary. Cook for about 1 minute until fragrant, scraping up any browned bits from the bottom of the pan.
  6. Return the steak bites to the skillet. Toss to coat in the garlic butter and cook for another 1-2 minutes until the steak reaches your desired doneness. Keep warm.
  7. While the steak cooks, prepare the polenta. Bring the broth to a boil in a medium saucepan.
  8. Slowly whisk in the polenta, stirring constantly to prevent lumps.
  9. Reduce heat to low and cook according to package directions, usually 5-7 minutes, stirring frequently until thick.
  10. Stir in the heavy cream and Parmesan cheese until smooth and creamy.
  11. Remove the polenta from the heat. Stir in the fresh parsley and chives. Taste and adjust seasoning with salt and pepper.
  12. To serve, spoon a portion of the herb polenta onto a small plate or appetizer serving spoon. Top with several garlic butter steak bites. Serve immediately.

Notes

  • For best results, use high-quality steak.
  • Do not overcrowd the pan when searing the steak; cook in batches.
  • You can substitute milk for heavy cream in the polenta for a slightly lighter texture.
  • Chop your herbs ahead of time to speed up the final assembly.
