Ingredients

Scale
  • 1 cup warm water (105-115F)
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • 2 tablespoons baking soda
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons unsalted butter, melted (for brushing)

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Add flour and salt to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 425F. Line a baking sheet with parchment paper.
  6. In a small bowl, combine parmesan cheese, minced garlic, and chopped parsley.
  7. Punch down the dough and divide it into 16 equal pieces. Roll each piece into a rope about 6 inches long.
  8. Cut each rope into 3-4 bite-sized pieces.
  9. In a shallow dish, whisk the beaten egg with 2 tablespoons of water.
  10. In a large pot, bring 8 cups of water and the baking soda to a boil.
  11. Working in batches, dip each pretzel bite into the boiling water for 30 seconds.
  12. Remove pretzel bites with a slotted spoon and place them on the prepared baking sheet.
  13. Brush the tops of the pretzel bites with the egg wash.
  14. Sprinkle the parmesan garlic mixture over the pretzel bites.
  15. Bake for 10-12 minutes, or until golden brown.
  16. While still warm, brush the pretzel bites with 2 tablespoons of melted butter.

Notes

  • For extra flavor, you can add a pinch of garlic powder to the dough.
