Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 4 ounces shredded cheddar cheese
  • 2 ounces crumbled blue cheese
  • 1/4 cup finely chopped fresh chives
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper
  • 1 cup finely crushed pretzel sticks
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons black sesame seeds (for eyes)
  • 1 tablespoon small black olive pieces (for mouths)

Instructions

  1. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled blue cheese, chopped chives, garlic powder, and black pepper. Mix until well combined.
  2. Cover the bowl and refrigerate the cheese mixture for at least 1 hour, or until firm enough to shape.
  3. Place the crushed pretzel sticks in a shallow dish.
  4. In a separate small bowl, combine the chopped parsley and black sesame seeds.
  5. Scoop out tablespoon-sized portions of the cheese mixture and roll them into small balls.
  6. Roll each cheese ball in the crushed pretzel sticks to coat evenly.
  7. Place the coated cheese balls on a serving platter.
  8. Use small pieces of black olives to create mouths on some of the cheese balls and the black sesame seeds to create eyes on others, giving them a ghostly appearance.
  9. Arrange the ghostly cheese ball bites on a platter and serve immediately or refrigerate until ready to serve.

Notes

  • For a spookier look, you can use edible black food coloring to tint some of the cheese balls gray before coating them in pretzels.
  • If you don’t have pretzel sticks, you can use finely crushed crackers or breadcrumbs for coating.
  • These can be made a day in advance and stored in an airtight container in the refrigerator.
