Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Vanilla Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, ginger, cinnamon, nutmeg, cloves, and salt.
  2. In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are okay.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. For each pancake, pour about 1/4 cup of batter onto the hot griddle.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. While the pancakes are cooking, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk, a teaspoon at a time, if needed to reach your desired drizzling consistency.
  8. Serve the gingerbread pancakes warm, drizzled generously with the vanilla glaze.

Notes

  • For a richer flavor, you can use buttermilk instead of regular milk.
  • Add a pinch of black pepper to the dry ingredients for a subtle warmth.
  • The glaze can be made ahead of time and stored in an airtight container in the refrigerator. Re-warm gently before serving if necessary.
