Ingredients

Scale
  • 2.5 pounds boneless pork shoulder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup your favorite BBQ sauce
  • 1/4 cup water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Gluten-free tortillas or lettuce wraps
  • Optional toppings: coleslaw, sliced red onion, pickles, cilantro

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Pat the pork shoulder dry with paper towels. Season it generously on all sides with salt, black pepper, garlic powder, and onion powder.
  3. Place the seasoned pork in a Dutch oven or oven-safe pot.
  4. In a small bowl, whisk together the BBQ sauce, water, apple cider vinegar, smoked paprika, chili powder, and cayenne pepper (if using).
  5. Pour the BBQ sauce mixture over the pork.
  6. Cover the pot tightly with a lid or foil.
  7. Bake for 3 to 4 hours, or until the pork is fork-tender and easily shreds.
  8. Remove the pork from the pot and place it on a cutting board or in a bowl.
  9. Using two forks, shred the pork.
  10. Return the shredded pork to the pot with the remaining sauce. Stir to coat the pork evenly.
  11. Warm your gluten-free tortillas or prepare lettuce wraps.
  12. Serve the pulled pork in the tortillas or lettuce wraps. Add your favorite toppings.

Notes

  • For a slower cook, you can cook this in a slow cooker on low for 6-8 hours.
  • Adjust the spice level by adding more or less cayenne pepper.
  • You can make the pulled pork ahead of time and reheat it before serving.
