A recipe for moist, flavorful baked oats that taste like carrot cake, made entirely with gluten-free ingredients.

Ingredients

Scale
  • 1 1/2 cups gluten-free rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup
  • 1 large egg
  • 1/2 cup unsweetened almond milk
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup grated carrots (packed)
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tablespoons raisins (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish or use four individual ramekins.
  2. In a large bowl, mix the gluten-free rolled oats, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a separate bowl, whisk together the maple syrup, egg, almond milk, applesauce, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed. Do not overmix.
  5. Fold in the grated carrots, walnuts/pecans, and raisins, if using.
  6. Pour the batter evenly into the prepared baking dish or divide among the ramekins.
  7. Bake for 25 to 30 minutes, or until the top is set and a toothpick inserted near the center comes out mostly clean.
  8. Let the baked oats cool for 5 minutes before serving.

Notes

  • For a cream cheese style topping, mix 2 tablespoons of Greek yogurt with 1 teaspoon of powdered sweetener and a small squeeze of lemon juice.
  • If you prefer a sweeter bake, increase the maple syrup to 1/3 cup.
  • You can prepare this recipe ahead of time and store it covered in the refrigerator for up to 3 days. Reheat individual portions in the microwave.
