Enjoy this delicious gluten-free take on Mexican street corn, elote. It’s creamy, spicy, and perfect for your next gathering.

Ingredients

Scale
  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1/4 cup finely chopped cilantro
  • 1/4 cup grated cotija cheese (ensure it’s gluten-free)
  • 1/4 teaspoon chili powder, plus more for garnish
  • Pinch of cayenne pepper (optional)
  • Salt to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and grill for about 10-12 minutes, turning occasionally, until tender and lightly charred.
  3. In a small bowl, whisk together the mayonnaise, lime juice, chopped cilantro, chili powder, and cayenne pepper (if using).
  4. Once the corn is cool enough to handle, carefully spread the mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle the grated cotija cheese and a little extra chili powder over the top.
  6. Serve immediately.

Notes

  • Ensure your cotija cheese is labeled gluten-free. Some brands may contain anti-caking agents that are not gluten-free.
  • If you don’t have cotija cheese, you can substitute with a firm, crumbly feta cheese.
  • Adjust the chili powder and cayenne pepper to your spice preference.
