Make fluffy, savory gluten-free cheddar biscuits flavored with fresh garlic. This recipe uses a simple gluten-free flour blend to achieve a texture similar to traditional drop biscuits.

Ingredients

Scale
  • 2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • 1 cup sharp cheddar cheese, shredded
  • 2 cloves garlic, minced very finely
  • 3/4 cup cold buttermilk (or milk mixed with 1 teaspoon lemon juice)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, salt, sugar, garlic powder, and parsley.
  3. Add the cold butter pieces to the dry ingredients. Use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and minced fresh garlic until evenly distributed.
  5. Pour in the cold buttermilk all at once. Use a rubber spatula to mix just until the dough comes together. Do not overmix; the dough will be sticky.
  6. Drop the dough by heaping tablespoons onto the prepared baking sheet, leaving about 2 inches between each biscuit. You should get 10 to 12 biscuits.
  7. Bake for 12 to 15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and serve warm.

Notes

  • For a dairy-free adaptation, substitute the butter with cold vegan butter sticks and use unsweetened almond or soy milk instead of buttermilk.
  • If your gluten-free flour blend does not contain xanthan gum, add 1 teaspoon to the dry ingredients.
  • To prevent dry biscuits, measure your gluten-free flour by scooping it lightly into the measuring cup and leveling it off, rather than packing it down.
