A moist and flavorful gluten-free quick bread featuring fresh lemon zest and shredded zucchini.

Ingredients

Scale
  • 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup whole milk or dairy-free milk alternative
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini, squeezed dry

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour (using gluten-free flour) a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the gluten-free flour blend, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk together the granulated sugar and brown sugar. Add the eggs and oil, mixing until just combined.
  4. Stir in the milk, lemon zest, lemon juice, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  6. Fold in the squeezed, shredded zucchini by hand.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 15 minutes before carefully turning it out onto a wire rack to cool completely.

Notes

  • Squeeze excess moisture from the shredded zucchini using paper towels or a clean kitchen cloth for the best texture.
  • If your gluten-free flour blend does not contain xanthan gum, add 1 teaspoon to the dry ingredients.
  • For a simple glaze, whisk together 1/2 cup powdered sugar with 2 tablespoons of lemon juice and drizzle over the cooled loaf.
