Preheat your waffle iron according to the manufacturer’s directions. If using a stick maker, prepare it now. If using a standard iron, prepare to cut the waffles into sticks later.
In a large bowl, whisk together the gluten-free flour blend, 2 tablespoons sugar, baking powder, salt, and 1 teaspoon cinnamon.
In a separate medium bowl, whisk together the milk, eggs, melted butter or oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few small lumps are acceptable for fluffy waffles.
Lightly grease the waffle iron plates. Pour the batter onto the iron, using the amount recommended for your specific machine.
Cook until the waffle is golden brown and crisp, usually 4 to 6 minutes, depending on your iron’s setting.
While the waffle cooks, prepare the coating: In a shallow dish, mix the 1/2 cup sugar and 2 tablespoons ground cinnamon until fully combined.
Remove the cooked waffle. If using a standard iron, immediately cut the hot waffle into 3 or 4 sticks using a sharp knife or pizza cutter.
While the waffle sticks are still warm, gently toss or roll them in the cinnamon sugar mixture until evenly coated.
Repeat with the remaining batter. Serve immediately, or keep warm while you coat the rest.
Notes
For extra crispiness, use the lowest setting on your waffle iron first, then cook for an extra minute or two on a medium setting.
If your gluten-free blend does not contain xanthan gum, add 1 teaspoon to the dry ingredients.
For a simple glaze, whisk 1 cup powdered sugar with 2 tablespoons milk and 1/2 teaspoon vanilla extract. Drizzle over the finished sticks.
