Prepare a complete, flavorful Greek chicken dinner on one pan. This recipe uses a bright lemon, garlic, and oregano marinade to keep the chicken juicy while roasting potatoes and vegetables alongside it.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1.5 lbs small red or yellow potatoes, quartered
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1/2 cup pitted Kalamata olives
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large rimmed baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to make the marinade.
  3. Place the chicken pieces in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, turning to coat completely. Reserve the remaining half of the marinade.
  4. In a separate large bowl, toss the quartered potatoes and red onion wedges with the reserved marinade.
  5. Arrange the marinated potatoes and onions in a single layer on the prepared baking sheet.
  6. Place the marinated chicken pieces among the potatoes and onions on the sheet pan.
  7. Bake for 25 minutes.
  8. Remove the pan from the oven. Scatter the cherry tomatoes and olives around the chicken and potatoes.
  9. Return the pan to the oven and bake for another 10 to 15 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the potatoes are tender.
  10. Serve immediately directly from the pan.

Notes

  • For extra flavor, use chicken thighs instead of breasts; they stay moister during roasting.
  • If you prefer a crispier potato, toss them with 1 tablespoon of cornstarch before adding the marinade.
  • You can substitute zucchini or bell peppers for the red onion if you prefer different vegetables.
