Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh or frozen cranberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
  2. In a small bowl, combine graham cracker crumbs and melted butter. Press about 1 teaspoon of the mixture into the bottom of each mini muffin liner.
  3. In a medium bowl, beat the softened cream cheese and granulated sugar until smooth.
  4. Stir in the Greek yogurt and vanilla extract until well combined.
  5. Gently fold in the chopped cranberries.
  6. Spoon the cream cheese mixture evenly over the graham cracker crusts in the muffin liners.
  7. Bake for 15-18 minutes, or until the edges are set and the centers are just slightly jiggly.
  8. Let the bites cool in the muffin tin for 10 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, you can dust them with powdered sugar if desired.
  10. Store in an airtight container in the refrigerator.
