Make a creamy, comforting green bean casserole using fresh ingredients and top it with homemade crispy fried onions for a superior holiday side dish.

Ingredients

Scale
  • 1.5 lb fresh green beans, trimmed
  • 1 tbsp olive oil
  • 1 medium yellow onion, thinly sliced for topping
  • 1/2 cup all-purpose flour for topping
  • 1/4 tsp salt for topping
  • 1/4 tsp black pepper for topping
  • 1 cup vegetable oil for frying
  • 10.5 oz can condensed cream of mushroom soup (or 1.5 cups homemade mushroom sauce)
  • 1/2 cup milk
  • 1 tsp soy sauce
  • 1/4 tsp black pepper
  • 8 oz cremini mushrooms, sliced
  • 1 cup shredded Gruyere cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 1.5-quart baking dish.
  2. Blanch the green beans in boiling salted water for 3 minutes. Immediately transfer them to an ice bath to stop cooking. Drain well.
  3. Prepare the crispy onions: Toss the thinly sliced onion with flour, salt, and pepper until coated. Heat vegetable oil in a small saucepan over medium-high heat until it reaches 350°F (175°C). Fry the onions in batches until golden brown and crisp, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Set aside half for topping.
  4. In a large bowl, combine the cream of mushroom soup, milk, soy sauce, and pepper. Stir in the sliced cremini mushrooms. If using cheese, stir in half of the Gruyere now.
  5. Fold in the blanched green beans until they are evenly coated with the sauce.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 20 minutes.
  8. Remove from the oven, sprinkle the remaining cheese (if using) and the reserved half of the homemade crispy onions over the top.
  9. Return to the oven and bake for another 5-10 minutes, or until the topping is golden brown and the casserole is bubbly.

Notes

  • To make this dish ahead of time, assemble the casserole (without the topping) up to 24 hours in advance. Cover and refrigerate. Add 10-15 minutes to the initial baking time. Add the onions just before the final bake.
  • For an air fryer method, use a small oven-safe dish that fits your basket. Bake at 350°F (175°C) for 15 minutes, top, and cook for 3-5 more minutes until hot.
