Create a nostalgic comfort meal with a perfectly grilled cheese sandwich paired with creamy butternut squash soup. This combination brings warmth and familiar flavors to your table.

Ingredients

Scale
  • 2 slices of your favorite bread
  • 2 tablespoons butter, softened
  • 2 slices of cheese (cheddar, American, or your choice)
  • 1 medium butternut squash
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. Peel, seed, and cube the butternut squash.
  2. Heat olive oil in a pot over medium heat. Sauté onion until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add the cubed squash and broth. Bring to a boil, then reduce heat and simmer until the squash is tender, about 15-20 minutes.
  5. Carefully transfer the soup mixture to a blender or use an immersion blender. Blend until completely smooth.
  6. Return the soup to the pot. Stir in heavy cream (if using), salt, pepper, and nutmeg. Keep warm.
  7. Butter one side of each slice of bread.
  8. Place one slice of bread, butter-side down, in a skillet over medium heat.
  9. Layer the cheese on the bread. Top with the second slice of bread, butter-side up.
  10. Grill for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  11. Slice the grilled cheese sandwich in half.
  12. Serve the hot soup immediately with the grilled cheese for dipping.

Notes

  • For extra flavor in the soup, roast the squash cubes before simmering.
  • Use a mix of cheeses in your sandwich for layered flavor.
  • A little cayenne pepper in the soup adds a nice subtle warmth.
