Learn how to make delicious grilled elote, also known as Mexican street corn. This recipe focuses on achieving perfectly charred kernels, a creamy and flavorful coating, and vibrant toppings. It’s an easy and exciting dish perfect for gatherings or a tasty snack.

Ingredients

Scale
  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup crema mexicana or sour cream
  • 1/4 cup grated cotija cheese, plus more for garnish
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder, plus more for dusting
  • Salt to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and grill for 8-10 minutes, turning occasionally, until tender and slightly charred.
  3. While the corn is grilling, prepare the elote coating. In a small bowl, whisk together mayonnaise, crema mexicana (or sour cream), cotija cheese, cilantro, lime juice, and chili powder.
  4. Once the corn is grilled, carefully spread the coating mixture evenly over each ear of corn.
  5. Return the corn to the grill for another 1-2 minutes, just to warm the coating through.
  6. Dust with additional chili powder and garnish with more cotija cheese and fresh cilantro before serving.

Notes

  • For extra char, grill the corn directly over the flames for a few minutes.
  • If you don’t have a grill, you can char the corn under a broiler or in a hot cast-iron skillet.
  • Adjust the chili powder to your spice preference.
  • Cotija cheese is a salty, crumbly Mexican cheese. If you can’t find it, feta can be a substitute, though it will alter the flavor.
