Prepare flavorful chicken tacos using a sweet and tangy teriyaki glaze with pineapple, served in warm tortillas with a crisp slaw.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup pineapple chunks, fresh or canned (drained if canned)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 12 small corn or flour tortillas
  • For Slaw: 2 cups shredded cabbage, 1/4 cup mayonnaise, 1 tablespoon lime juice, pinch of salt
  • For Drizzle: 1/4 cup mayonnaise, 1 tablespoon sriracha

Instructions

  1. Combine soy sauce, brown sugar, rice vinegar, ginger, garlic, and sesame oil in a small bowl. Set aside half of this mixture for later use as a finishing sauce.
  2. In a separate small bowl, whisk the cornstarch into the 1/4 cup of water until smooth. Add this slurry to the remaining half of the sauce mixture.
  3. Place the chicken pieces in a skillet over medium-high heat. Cook until lightly browned on all sides, about 5 minutes.
  4. Pour the sauce mixture over the chicken. Bring to a simmer, stirring occasionally, until the sauce thickens, about 3-4 minutes.
  5. Add the pineapple chunks to the skillet. Cook for 2 more minutes, allowing the pineapple to heat through and the sauce to coat the chicken. Remove from heat.
  6. Prepare the slaw by mixing the shredded cabbage, mayonnaise, lime juice, and salt in a bowl.
  7. Prepare the spicy drizzle by mixing the mayonnaise and sriracha in a small bowl.
  8. Warm the tortillas according to package directions (skillet or microwave).
  9. Assemble the tacos: Fill each tortilla with the Hawaiian chicken and pineapple mixture. Top with the cabbage slaw and drizzle with the spicy mayo.

Notes

  • Grill the chicken instead of pan-frying for a smokier flavor.
  • Use pre-shredded coleslaw mix to save prep time.
  • Garnish with toasted sesame seeds or chopped green onions if desired.
