Ingredients
Scale
1 cup whole wheat flour
1/4 cup vanilla protein powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon brown sugar (optional, for sweetness)
1 1/4 cups unsweetened almond milk
1 large egg
2 tablespoons unsweetened applesauce
1 tablespoon melted coconut oil, plus more for greasing
1 teaspoon vanilla extract
Instructions
In a large bowl, whisk together the whole wheat flour, protein powder, ginger, cinnamon, nutmeg, cloves, baking powder, baking soda, salt, and optional brown sugar.
In a separate medium bowl, whisk together the almond milk, egg, applesauce, melted coconut oil, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Heat a lightly oiled griddle or non-stick skillet over medium heat.
Pour about 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until golden brown and cooked through.
Serve warm with your favorite toppings.
Notes
For a sweeter pancake, you can add a tablespoon of maple syrup to the batter.
Feel free to adjust the gingerbread spices to your preference.
These pancakes can be made ahead of time and reheated.
