Make these chewy, perfectly spiced pumpkin granola bars for a fun, seasonal treat that packs well for lunchboxes. You will love the warm fall flavors.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup pumpkin puree (not pie filling)
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 cup smooth almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, letting some overhang for easy removal.
  2. In a large bowl, combine the rolled oats, chopped nuts, and pumpkin seeds.
  3. In a separate medium bowl, whisk together the pumpkin puree, maple syrup, melted coconut oil, almond butter, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
  4. Pour the wet ingredients over the dry ingredients. Mix well until everything is evenly coated.
  5. Press the mixture firmly and evenly into the prepared baking pan. Use the back of a spatula or another piece of parchment paper to pack it down tightly. This step is key for chewy bars.
  6. Bake for 20 to 25 minutes, or until the edges are lightly golden brown.
  7. Remove the pan from the oven. If using, immediately sprinkle the chocolate chips over the top and gently press them in.
  8. Let the bars cool completely in the pan on a wire rack. Cooling fully helps them set.
  9. Once cool, use the parchment paper overhang to lift the block out. Cut into 10 or 12 bars.

Notes

  • For the best chewiness, press the mixture into the pan very firmly.
  • Store leftovers in an airtight container at room temperature for up to one week, or refrigerate for longer freshness.
  • You can substitute almond butter with sunflower seed butter for a nut-free version.
  • If you like a stronger spice flavor, add an extra 1/4 teaspoon of cinnamon.
