Ingredients
Scale
1 ½ cups all-purpose flour
½ teaspoon salt
½ cup (1 stick) cold unsalted butter, cut into cubes
4-6 tablespoons ice water
1 ½ pounds assorted heirloom tomatoes, sliced
1 tablespoon olive oil
1 teaspoon dried herbs (such as thyme, oregano, or rosemary)
½ cup shredded cheese (such as Gruyère, goat cheese, or Parmesan)
1 egg, beaten (for egg wash)
Fresh herbs for garnish (optional)
Instructions
In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer the dough to the prepared baking sheet.
Arrange the sliced tomatoes in the center of the dough, leaving a 2-inch border.
Drizzle the tomatoes with olive oil and sprinkle with dried herbs.
Fold the dough border up and over the edges of the tomatoes, pleating as you go to create the rustic tart shape.
Brush the folded pastry with the beaten egg for an egg wash.
Sprinkle the cheese over the tomatoes.
Bake for 30-40 minutes, or until the crust is golden brown and the tomatoes are tender and bubbly.
Let the tart cool slightly before slicing and serving. Garnish with fresh herbs if desired.
Notes
For a richer flavor, you can add a layer of Dijon mustard or pesto to the pastry before adding the tomatoes.
Experiment with different cheese and herb combinations to find your favorite.
If your tomatoes are very juicy, gently pat them dry with paper towels before arranging them on the tart.
