Bake these shredded chicken enchiladas featuring a sauce enriched with Greek yogurt for an extra protein boost. This recipe is suitable for meal prepping.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (10 ounce) can enchilada sauce (low sodium preferred)
  • 1/2 cup plain nonfat Greek yogurt
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 8 whole wheat or low-carb tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in the enchilada sauce, Greek yogurt, chili powder, cumin, and salt into the skillet. Heat gently until warmed through, stirring constantly to prevent the yogurt from curdling. This is your protein-enriched sauce.
  4. In a bowl, combine the shredded chicken with 1/2 cup of the sauce mixture.
  5. Dip each tortilla briefly in the remaining sauce to soften it slightly.
  6. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up the tortilla tightly and place it seam-down in the prepared baking dish.
  7. Pour the remaining sauce evenly over the rolled tortillas.
  8. Sprinkle the Monterey Jack and cheddar cheeses over the top.
  9. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the dish is heated through.

Notes

  • For a higher protein filling, mix 1/4 cup of low-fat cottage cheese, blended smooth, into the shredded chicken before rolling.
  • Use low-carb tortillas to reduce the carbohydrate count while maintaining high protein.
  • If you prefer a thicker sauce, allow the sauce mixture to simmer for 5 minutes before adding the chicken.
